Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp sugar
  • 0.5 cup cornmeal
  • 0.25 tsp black pepper
  • 0.25 tsp paprika optional
Wet Ingredients
  • 0.75 cup milk
  • 1 large egg
  • 2.5 cups onions finely chopped (about 2 medium)
For Frying
  • vegetable oil for frying (about 1 inch deep)

Method
 

  1. Whisk together all dry ingredients in a bowl.
  2. Beat milk and egg together, then stir into dry ingredients until smooth.
  3. Fold in chopped onions until evenly coated with batter.
  4. Heat oil in a skillet to 350°F.
  5. Drop spoonfuls of batter into hot oil and fry 2–3 minutes per side until golden.
  6. Drain on paper towels and serve warm with dipping sauce.

Notes
