Asparagus Wrapped in Crisp Prosciutto

Prosciutto-Wrapped Asparagus
  • 1 lb fresh asparagus woody ends trimmed
  • 8-10 slices prosciutto thinly sliced
  • 1 tbsp olive oil
  • 0.25 tsp garlic powder
  • 0.25 tsp freshly ground black pepper or to taste
  • 0.25 cup Parmesan cheese finely grated or shaved
  • 1 tsp fresh thyme leaves optional
  • 1 lemon cut into wedges for serving

Method
 

  1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Rinse the asparagus, trim away the woody ends, and pat the spears completely dry with paper towels.
  3. Place the asparagus in a large bowl. Drizzle with olive oil, then sprinkle with garlic powder and black pepper. Toss gently to coat.
  4. If the prosciutto slices are especially wide, cut them lengthwise into narrower strips.
  5. Gather two or three asparagus spears into a small bundle. Wrap one strip of prosciutto around the middle of the bundle in a slight spiral, leaving the tips and lower ends visible.
  6. Arrange the wrapped bundles on the prepared baking sheet with the prosciutto seam facing downward. Leave space between each bundle for even roasting.
  7. Roast for 12–15 minutes, turning the pan once if needed, until the asparagus is tender and the prosciutto is crisp around the edges.
  8. Remove from the oven and immediately sprinkle with Parmesan cheese and fresh thyme, if using.
  9. Serve warm with lemon wedges. Squeeze fresh lemon juice over the bundles just before eating.

Notes

Medium-thick asparagus spears work best because they become tender without overcooking. Prosciutto is naturally salty, so additional salt is usually unnecessary. For maximum crispness, serve immediately. Leftovers may be refrigerated in an airtight container for up to 3 days and reheated in a 375°F oven or air fryer.
