Ingredients
  

Filling
  • 1.5 lb lean ground beef
  • 0.5 onion diced
  • 3 cloves garlic minced
  • 2 tbsp taco seasoning
  • 0.5 cup salsa
  • 2 tbsp tomato paste
  • 2 cups cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded
Assembly
  • 10 8-inch flour tortillas
  • 2 tbsp olive oil for brushing

  • Mixing bowl
  • Baking sheet
  • Parchment paper

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment.
  2. Cook onion and garlic in olive oil, then brown the beef.
  3. Stir in taco seasoning, salsa, tomato paste and simmer.
  4. Mix in cheeses and cilantro.
  5. Fill warmed tortillas, roll tightly and place seam-side down.
  6. Brush with oil and bake 18–22 minutes, turning halfway, until crisp.
