Ingredients
  

Patties
  • 2 medium zucchini grated and squeezed dry
  • 1 tsp salt for draining
  • 2 large eggs
  • 0.75 cup Italian breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup finely chopped onion
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tsp Italian seasoning
  • 0.5 tsp black pepper
  • 2 tbsp olive oil for brushing

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
  2. Salt grated zucchini, rest 10–15 minutes, then squeeze out excess moisture.
  3. Combine zucchini with eggs, breadcrumbs, Parmesan, onion, garlic, parsley, Italian seasoning, and pepper.
  4. Shape into patties and place on prepared baking sheet.
  5. Brush lightly with olive oil.
  6. Bake for 20 minutes, flip, then bake another 12–15 minutes until golden.
  7. Cool slightly and serve with your favorite dipping sauce.

Notes

Removing as much moisture as possible from the zucchini is the key to crispy patties. Refrigerate leftovers for up to 4 days or freeze for up to 3 months.
