- Preheat a grill, flat-top, or cast-iron skillet over medium-high heat.
- Combine ground brisket with Worcestershire sauce, Dijon mustard, garlic, smoked paprika, salt, and pepper until just mixed.
- Divide into six equal portions and gently form thick patties. Press a shallow indentation into each center.
- Butter and toast the brioche buns until lightly golden.
- Cook patties for 4–5 minutes per side or until the internal temperature reaches 160°F (71°C).
- Top each burger with cheddar cheese during the final minute of cooking.
- Spread mayonnaise and barbecue sauce onto toasted buns.
- Assemble burgers with lettuce, tomato, onion, pickles, and serve immediately.
