Ingredients
  

Burger Patties
  • 2 lbs ground beef brisket
  • 1 tbsp Worcestershire sauce
  • 2 tsp Dijon mustard
  • 3 cloves garlic minced
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
For Assembly
  • 6 brioche burger buns
  • 6 slices sharp cheddar cheese
  • 2 tbsp butter softened
  • 6 leaves green leaf lettuce
  • 2 tomatoes sliced
  • 1 red onion thinly sliced
  • 18 chips dill pickles
  • 0.5 cup barbecue sauce
  • 0.5 cup mayonnaise

Method
 

  1. Preheat a grill, flat-top, or cast-iron skillet over medium-high heat.
  2. Combine ground brisket with Worcestershire sauce, Dijon mustard, garlic, smoked paprika, salt, and pepper until just mixed.
  3. Divide into six equal portions and gently form thick patties. Press a shallow indentation into each center.
  4. Butter and toast the brioche buns until lightly golden.
  5. Cook patties for 4–5 minutes per side or until the internal temperature reaches 160°F (71°C).
  6. Top each burger with cheddar cheese during the final minute of cooking.
  7. Spread mayonnaise and barbecue sauce onto toasted buns.
  8. Assemble burgers with lettuce, tomato, onion, pickles, and serve immediately.

Notes
