- Preheat the waffle iron according to the manufacturer’s instructions.
- Whisk flour, sugar, baking powder, cinnamon, cardamom, and salt in a bowl.
- Whisk milk, egg, melted butter, and vanilla in a second bowl. Stir into the dry ingredients just until combined.
- Cook waffles until golden and crisp. Cut into long strips for dipping and keep warm.
- For the hot chocolate, combine milk, cream, cocoa powder, brown sugar, cinnamon, ginger, cardamom, and cloves in a saucepan.
- Warm over medium-low heat, whisking often, until steaming but not boiling.
- Add chopped dark chocolate and whisk until fully melted and smooth. Stir in vanilla.
- Pour into mugs and serve immediately with warm spiced waffle dippers.
