Ingredients
  

Chai Hot Chocolate
  • 3 cups whole milk
  • 1 cup heavy cream
  • 4 oz dark chocolate finely chopped
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 0.5 tsp ground ginger
  • 0.25 tsp ground cardamom
  • 0.125 tsp ground cloves
  • 1 tsp vanilla extract
Spiced Waffle Dippers
  • 1.5 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp ground cinnamon
  • 0.25 tsp ground cardamom
  • 0.25 tsp salt
  • 1.25 cups milk
  • 1 egg large
  • 3 tbsp unsalted butter melted
  • 1 tsp vanilla extract

Method
 

  1. Preheat the waffle iron according to the manufacturer’s instructions.
  2. Whisk flour, sugar, baking powder, cinnamon, cardamom, and salt in a bowl.
  3. Whisk milk, egg, melted butter, and vanilla in a second bowl. Stir into the dry ingredients just until combined.
  4. Cook waffles until golden and crisp. Cut into long strips for dipping and keep warm.
  5. For the hot chocolate, combine milk, cream, cocoa powder, brown sugar, cinnamon, ginger, cardamom, and cloves in a saucepan.
  6. Warm over medium-low heat, whisking often, until steaming but not boiling.
  7. Add chopped dark chocolate and whisk until fully melted and smooth. Stir in vanilla.
  8. Pour into mugs and serve immediately with warm spiced waffle dippers.

Notes

For a milder chai flavor, reduce the ginger and cardamom slightly. The waffle dippers can be made ahead and reheated briefly in a toaster or oven.
