- Crack eggs into a bowl and whisk gently with salt until combined.
- Slowly stir in warm water or broth until fully mixed.
- Strain the mixture through a fine mesh sieve into a heatproof bowl.
- Remove any bubbles from the surface and cover loosely.
- Place bowl into a prepared steamer over gently simmering water.
- Steam for 12 to 15 minutes over low heat until just set.
- Allow to rest for 2 minutes after steaming.
- Drizzle with soy sauce and sesame oil, garnish with green onions, and serve warm.
