Ingredients
  

Egg Custard
  • 4 large eggs
  • 2 cups warm water or chicken broth
  • 0.5 tsp salt
  • 1 tsp light soy sauce
  • 0.5 tsp sesame oil
  • 2 green onions thinly sliced
  • 1 pinch white pepper optional

  • Fine mesh strainer
  • Heatproof bowl
  • Steamer pot

Method
 

  1. Crack eggs into a bowl and whisk gently with salt until combined.
  2. Slowly stir in warm water or broth until fully mixed.
  3. Strain the mixture through a fine mesh sieve into a heatproof bowl.
  4. Remove any bubbles from the surface and cover loosely.
  5. Place bowl into a prepared steamer over gently simmering water.
  6. Steam for 12 to 15 minutes over low heat until just set.
  7. Allow to rest for 2 minutes after steaming.
  8. Drizzle with soy sauce and sesame oil, garnish with green onions, and serve warm.

Notes

For the smoothest texture, strain the egg mixture and steam over gentle heat. Chicken broth can replace water for richer flavor.
