- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare cookie dough: In a bowl, cream butter and sugar until light and fluffy. Add egg and vanilla, mixing well.
- In a separate bowl, whisk flour, cocoa, baking soda, and salt. Gradually mix into wet ingredients until combined.
- Prepare cheesecake filling: Beat cream cheese, powdered sugar, and vanilla until smooth.
- Form small cookie bases on the baking sheet, top each with a small dollop of cheesecake filling, and cover lightly with more cookie dough.
- Bake for 10–12 minutes until cookies are set. Allow to cool before serving. Enjoy! ????????
