Ingredients

Pumpkins
  • 2 small sugar pumpkins about 2½–3 lb (1.1–1.4 kg) each; use cooking pumpkins, not decorative pumpkins
  • 2 tbsp olive oil divided
  • 1.25 tsp fine sea salt divided
  • 0.5 tsp black pepper divided
Savory Turkey and Rice Filling
  • 1 medium yellow onion diced
  • 8 oz cremini mushrooms finely chopped
  • 1 lb lean ground turkey about 93% lean
  • 1 crisp apple cored and diced; Honeycrisp or similar
  • 3 cloves garlic minced
  • 2 tsp fresh sage finely chopped; or 3/4 tsp dried
  • 1 tsp fresh thyme leaves or 1/3 tsp dried
  • 0.5 tsp smoked paprika
  • 2 cups cooked brown rice prepared ahead and cooled or freshly cooked
  • 0.33 cup low-sodium chicken or vegetable broth add a splash more only if needed
  • 2 cups baby spinach roughly chopped
  • 0.33 cup dried cranberries unsweetened or reduced-sugar if preferred
  • 0.33 cup grated Parmesan cheese plus extra to garnish; optional

Equipment

  • Sharp chef’s knife and sturdy cutting board
  • Rimmed baking sheet
  • Parchment paper
  • Large skillet
  • Wooden spoon
  • Instant-read food thermometer

Method

  1. Preheat the oven to 375°F (190°C). Line a rimmed baking sheet with parchment and position a rack near the center of the oven.
  2. Wash and dry both sugar pumpkins. Using a sharp, sturdy knife, cut a lid around each stem. Scoop out seeds and stringy fibers, leaving the firm pumpkin flesh intact. Brush the interiors and cut edges with 1 tablespoon olive oil and season with 1/4 teaspoon salt and 1/4 teaspoon pepper.
  3. Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the onion and mushrooms; cook for 5–6 minutes until the mushrooms release their moisture and begin to brown.
  4. Add the ground turkey and cook for 6–8 minutes, breaking it into small crumbles, until a food thermometer inserted into the thickest portion reads 165°F (74°C).
  5. Stir in the diced apple, garlic, sage, thyme, smoked paprika, remaining 1 teaspoon salt, and remaining 1/4 teaspoon pepper. Cook for 2 minutes.
  6. Add the cooked brown rice and broth. Stir for 2–3 minutes until the rice is hot and the broth is mostly absorbed. Fold in the chopped spinach and dried cranberries until the spinach wilts. Remove from the heat and stir in Parmesan.
  7. Spoon the warm filling loosely into the pumpkins, stopping just below the rims. If any filling remains, transfer it to a covered oven-safe dish and warm it alongside the pumpkins for the last 15–20 minutes.
  8. Place the pumpkin lids on top, set both pumpkins on the prepared baking sheet, and bake for 65–75 minutes. Begin checking at 60 minutes; the pumpkin flesh should yield easily to a fork and the center of the filling must reach 165°F (74°C). If the lids brown too quickly, tent loosely with foil.
  9. Let the pumpkins stand for 5–10 minutes. Carefully lift the lids and scoop portions of the savory rice-and-turkey filling onto plates, scraping tender roasted pumpkin flesh from the inner walls with each serving. Garnish with additional sage or Parmesan if desired.

Notes

Use two small cooking/sugar pumpkins of similar size, about 2½–3 lb each. The 2 cups of brown rice must be cooked before starting; rice-cooking time is not included. Prep time is about 25 minutes, and cook time includes skillet cooking and roasting. Roast until pumpkin flesh is fork-tender and filling is 165°F (74°C); larger pumpkins may require longer. Refrigerate leftovers in shallow containers within 2 hours, use within 3–4 days, and reheat thoroughly to 165°F (74°C). Nutrition is an approximate estimate per serving and varies with pumpkin size, turkey leanness, and cheese.
