Fried Calamari with Tartar Sauce

Ingredients
  

Calamari
  • 1.5 lb cleaned squid rings and tentacles
  • 1 cup all-purpose flour
  • 0.5 cup cornstarch
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 eggs beaten
  • 0.75 cup buttermilk
Tartar Sauce
  • 1 cup mayonnaise
  • 2 tbsp chopped dill pickles
  • 1 tbsp capers chopped
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice

Equipment

  • Mixing bowls
  • Deep fryer or Dutch oven
  • Wire rack
  • Thermometer

Method
 

  1. Heat oil to 365°F (185°C).
  2. Mix flour, cornstarch and seasonings.
  3. Dip squid in buttermilk and egg mixture.
  4. Coat well in seasoned flour.
  5. Fry in small batches for 2–3 minutes until golden.
  6. Drain on a wire rack and season lightly with salt.
  7. Mix tartar sauce ingredients until smooth.
  8. Serve immediately with lemon wedges and tartar sauce.
