Grilled Jimmy Nardello Peppers

Sweet Jimmy Nardello peppers are quickly grilled until tender and lightly charred, then finished with olive oil, red wine vinegar, garlic, and fresh herbs for an easy summer side dish.

Ingredients
  

Grilled Peppers
  • 1.5 lb Jimmy Nardello peppers washed and thoroughly dried
  • 2 tbsp extra virgin olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp freshly ground black pepper
Garlic Herb Dressing
  • 1 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 garlic clove small, finely minced
  • 2 tbsp fresh parsley finely chopped
  • 1 tbsp fresh basil finely chopped
  • 0.25 tsp flaky sea salt or to taste

  • Outdoor grill or grill pan
  • Large mixing bowl
  • Grill tongs
  • Small mixing bowl

Method
 

  1. Preheat an outdoor grill or grill pan to medium-high heat, approximately 425°F to 450°F.
  2. Rinse the Jimmy Nardello peppers and pat them completely dry. Leave the peppers whole with the stems attached.
  3. Place the peppers in a large bowl. Drizzle with 2 tablespoons extra virgin olive oil and season with kosher salt and freshly ground black pepper. Toss until lightly and evenly coated.
  4. Arrange the peppers directly on the hot grill in a single layer. Grill for 3 to 4 minutes until the undersides are blistered with dark grill marks.
  5. Turn the peppers with tongs and grill for another 3 to 4 minutes, rotating curved peppers as needed, until tender and lightly collapsed with charred spots.
  6. While the peppers cook, combine 1 tablespoon olive oil, red wine vinegar, minced garlic, chopped parsley, and chopped basil in a small bowl.
  7. Transfer the hot grilled peppers to a serving plate and spoon the garlic herb dressing evenly over the top.
  8. Finish with flaky sea salt and serve hot, warm, or at room temperature.

Notes

Jimmy Nardello peppers are naturally sweet rather than hot. Grill them whole for easier handling, and avoid overcooking since their thin walls soften quickly. Leftovers can be refrigerated in an airtight container for up to 4 days and are excellent served at room temperature.
