Ingredients
  

Lamb
  • 8 lamb loin chops
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 2 tsp fresh rosemary chopped
  • 1 tsp fresh thyme
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 2 tbsp butter
Sweet Potatoes
  • 2 large sweet potatoes cut into wedges
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp onion powder
  • 1 tsp salt
  • 0.5 tsp black pepper

Equipment

  • Large baking sheet
  • Cast iron skillet or grill
  • Mixing bowl
  • Tongs

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Season and roast sweet potatoes for 30–35 minutes, turning halfway.
  3. Mix olive oil, garlic, rosemary, thyme, paprika, salt and pepper.
  4. Rub mixture over lamb chops.
  5. Cook lamb in a hot skillet or grill 3–4 minutes per side for medium-rare.
  6. Add butter and baste during the final minute.
  7. Rest lamb for 5 minutes.
  8. Serve with roasted sweet potatoes and parsley.
