Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.25 cup honey
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.25 cup milk

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk flour, oats, baking powder, baking soda, salt, cinnamon and nutmeg together.
  3. Cream butter and brown sugar until fluffy.
  4. Add honey, egg and vanilla extract. Mix thoroughly.
  5. Gradually add dry ingredients alternating with milk.
  6. Scoop dough onto baking sheets and flatten slightly.
  7. Bake for 12–14 minutes until lightly golden.
  8. Cool for 5 minutes before transferring to a wire rack.
  9. Dust with powdered sugar if desired and serve.

Notes
