Burrito Bowl
  • 3 cups cooked jasmine rice
  • 2 large mangoes diced
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels
  • 1 avocado sliced
  • 1 cup cherry tomatoes halved
  • 2 cups red cabbage shredded
  • 0.25 cup fresh cilantro chopped
  • 1 lime cut into wedges
Lime Dressing
  • 3 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1 tsp honey or maple syrup
  • 0.5 tsp cumin
  • 0.5 tsp chili powder
  • 0.25 tsp garlic powder
  • 0.25 tsp salt or to taste
  • 0.25 tsp black pepper or to taste

Method
 

  1. Cook rice according to package directions and allow it to cool slightly.
  2. Drain and rinse the black beans thoroughly.
  3. Dice mangoes, slice avocado, halve tomatoes, shred cabbage, and chop cilantro.
  4. Whisk together olive oil, lime juice, honey, cumin, chili powder, garlic powder, salt, and pepper.
  5. Divide rice evenly among four serving bowls.
  6. Arrange black beans, mango, corn, tomatoes, cabbage, and avocado over the rice.
  7. Drizzle the lime dressing over each bowl.
  8. Garnish with cilantro and lime wedges before serving.
