Ingredients
  

Muffin Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter melted
  • 0.75 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.75 cup whole milk
  • 0.5 cup sour cream
  • 1 cup mini chocolate chips
  • 2 tbsp mini chocolate chips for topping

Method
 

  1. Preheat oven to 375°F (190°C). Grease or line a mini muffin pan.
  2. Whisk together flour, baking powder, baking soda, and salt in a bowl.
  3. In another bowl, whisk melted butter and sugar until smooth. Add eggs and vanilla extract.
  4. Mix in milk and sour cream until combined.
  5. Gradually add dry ingredients into wet ingredients, stirring gently until just combined.
  6. Fold in mini chocolate chips.
  7. Fill muffin cups 3/4 full and top with extra chocolate chips.
  8. Bake for 10–12 minutes until golden and cooked through.
  9. Cool for 5 minutes in the pan before transferring to a wire rack.

Notes

Do not overmix the batter for soft and fluffy muffins. Store leftovers in an airtight container or freeze for later.
