New England Lobster Roll

A classic Maine-style lobster roll with tender lobster meat in a buttery toasted split-top bun and a light lemon mayonnaise dressing.

Ingredients
  

Lobster Filling
  • 1.5 lb cooked lobster meat claw, knuckle and tail
  • 0.25 cup mayonnaise
  • 2 tbsp melted butter
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard optional
  • 2 tbsp celery finely diced
  • 2 tbsp fresh chives chopped
  • salt to taste
  • black pepper to taste
Assembly
  • 4 split-top hot dog buns
  • 2 tbsp butter for toasting buns
  • 4 wedges lemon for serving

Method
 

  1. Mix mayonnaise, lemon juice, Dijon, celery, chives, salt and pepper.
  2. Fold in the lobster gently, keeping large chunks intact. Chill 10–15 minutes.
  3. Butter the outside of split-top buns and toast until golden.
  4. Fill each bun generously with the chilled lobster mixture.
  5. Garnish with chives and serve immediately with lemon wedges.

Notes

For the most authentic flavor, use fresh steamed lobster and lightly dress the meat so the lobster remains the star.
