  • 2 cups Rolled oats
  • 1/2 cup Butter
  • 1/2 cup Brown sugar
  • 1/4 cup Maple syrup
  • 1 tsp Vanilla extract
  • 1/2 cup Dried cranberries
  • 1/2 cup Chopped pecans

Method
 

  1. Melt butter and brown sugar in a saucepan. Stir in maple syrup and cook until slightly thickened.
  2. Remove from heat and stir in vanilla extract, oats, cranberries, and pecans until well coated.
  3. Drop spoonfuls of mixture onto parchment-lined baking sheet and shape into cookies.
  4. Refrigerate for 30–45 minutes or until firm.
  5. Serve immediately or store in airtight container.
