Method
- Wash the peaches and guavas thoroughly. Peel and pit the peaches, then chop the peaches and guavas into small pieces.
- Add the chopped peaches, guavas, granulated sugar, and water to a medium saucepan.
- Cook over medium heat for 12 to 15 minutes, stirring occasionally, until the fruit is very soft and the sugar has dissolved.
- Carefully transfer the cooked fruit mixture to a blender and blend until completely smooth.
- Strain the mixture through a fine-mesh sieve for a silky syrup, pressing with a spoon to extract as much liquid as possible.
- Stir in the fresh lime juice and optional vanilla extract. Cool the syrup completely, then refrigerate until thoroughly chilled.
- Prepare the shaved ice with a shaved ice machine or a high-powered blender, working in batches if necessary.
- Divide the shaved ice among six chilled serving bowls and pour the cold peach guava syrup generously over each serving.
- Garnish with fresh peach slices, guava slices, mint, optional lime zest, and a light drizzle of sweetened condensed milk. Serve immediately.

Notes
Use fully ripe fruit for the best natural sweetness and tropical flavor. Chill the syrup completely before assembling so it does not melt the shaved ice too quickly. The syrup can be refrigerated in an airtight container for up to 7 days or frozen for up to 3 months. Nutrition is estimated without optional condensed milk.
