Ingredients
  

Toasties
  • 4 slices sourdough bread
  • 1 cup roast chicken shredded
  • 0.75 cup kimchi well drained and roughly chopped
  • 1 cup cheddar or mozzarella cheese shredded
  • 2 tbsp mayonnaise
  • 1 tsp gochujang optional
  • 2 tbsp unsalted butter softened
  • 2 green onions thinly sliced

Method
 

  1. Mix mayonnaise and gochujang in a small bowl, if using.
  2. Spread the mayonnaise mixture on the inside of each slice of bread.
  3. Layer half the cheese, roast chicken, chopped kimchi, green onions, and remaining cheese over two bread slices.
  4. Top with the remaining bread slices and butter the outer sides of each sandwich.
  5. Heat a skillet over medium-low heat and add the sandwiches.
  6. Cook for 4–5 minutes per side, pressing gently, until the bread is deeply golden and the cheese is fully melted.
  7. Rest for 1–2 minutes, slice, and serve hot.

Notes

Drain the kimchi thoroughly before assembling so the bread stays crisp. Medium-low heat gives the cheese time to melt before the bread browns too quickly.
