Ingredients
  

Sweet Potatoes
  • 4 sweet potatoes medium
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika
  • salt and pepper to taste
Black Bean Salsa
  • 1 can black beans 15 oz, drained
  • 1 cup corn kernels
  • 0.5 red onion diced
  • 1 red bell pepper diced
  • 1 avocado diced
  • 0.25 cup cilantro chopped
  • 1 lime juiced
  • 1 tbsp olive oil
  • salt and pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet.
  2. Pierce sweet potatoes with a fork, rub with oil and spices.
  3. Bake 40–50 minutes until fork tender.
  4. Mix all salsa ingredients in a bowl.
  5. Slice potatoes open and fluff interior.
  6. Fill with black bean salsa and toppings. Serve warm.
