Ingredients
  

Corn Bite Batter
  • 2 cups corn kernels fresh, frozen, or canned
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.25 tsp cumin
  • 2 eggs large
  • 0.5 cup milk
  • 1 cup cotija cheese crumbled
  • 1 jalapeño finely diced
  • 2 tbsp cilantro chopped
  • 1 tbsp lime juice

Method
 

  1. Whisk together flour, baking powder, salt, pepper, and seasonings.
  2. Mix eggs, milk, and lime juice in a separate bowl.
  3. Combine wet and dry ingredients into a thick batter.
  4. Fold in corn, jalapeño, cheese, and cilantro.
  5. Heat oil to 350°F (175°C).
  6. Drop spoonfuls of batter into hot oil and fry until golden brown.
  7. Drain on paper towels.
  8. Garnish and serve immediately.

Notes
