Ingredients
  

Soup
  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 cloves garlic minced
  • 1 tsp Italian seasoning
  • 0.5 tsp dried thyme
  • 0.25 tsp red pepper flakes optional
  • 6 cups vegetable broth
  • 2 cans white beans drained and rinsed
  • 5 oz fresh spinach
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup Parmesan cheese optional
  • 1 tbsp lemon juice

Method
 

  1. Heat olive oil in a large soup pot over medium heat.
  2. Cook onion, carrots, and celery until softened.
  3. Add garlic, Italian seasoning, thyme, and red pepper flakes.
  4. Pour in vegetable broth and bring to a boil.
  5. Add white beans and simmer for 20 minutes.
  6. Mash some beans to create a creamier texture.
  7. Stir in spinach and cook until wilted.
  8. Add salt, pepper, and lemon juice.
  9. Serve hot with Parmesan if desired.

Notes
