- Pour the sugar-free gelatin powder into a medium mixing bowl.
- Add the boiling water and whisk for about 2 minutes, or until the gelatin has completely dissolved.
- Stir in the cold water until evenly combined.
- Refrigerate the gelatin mixture for 30–45 minutes, until slightly thickened but not fully set.
- Add the thawed Cool Whip to the partially set gelatin.
- Fold gently with a silicone spatula until the mixture is smooth, fluffy, and evenly colored.
- If using strawberries or blueberries, gently fold the dry fruit into the mixture without overmixing.
- Spoon the mixture into individual dessert cups or transfer it to one serving bowl.
- Cover and refrigerate for at least 2 hours, or until fully chilled and set.
- Garnish with fresh berries and mint leaves immediately before serving, if desired.
