Ingredients
  

Jello Fluff
  • 1 0.3-ounce package sugar-free gelatin any flavor
  • 1 cup boiling water
  • 0.5 cup cold water
  • 8 ounces Cool Whip thawed
Optional Fruit and Garnishes
  • 1 cup strawberries diced and patted dry
  • 0.5 cup blueberries washed and dried
  • fresh raspberries for garnish, optional
  • fresh mint leaves for garnish, optional

Method
 

  1. Pour the sugar-free gelatin powder into a medium mixing bowl.
  2. Add the boiling water and whisk for about 2 minutes, or until the gelatin has completely dissolved.
  3. Stir in the cold water until evenly combined.
  4. Refrigerate the gelatin mixture for 30–45 minutes, until slightly thickened but not fully set.
  5. Add the thawed Cool Whip to the partially set gelatin.
  6. Fold gently with a silicone spatula until the mixture is smooth, fluffy, and evenly colored.
  7. If using strawberries or blueberries, gently fold the dry fruit into the mixture without overmixing.
  8. Spoon the mixture into individual dessert cups or transfer it to one serving bowl.
  9. Cover and refrigerate for at least 2 hours, or until fully chilled and set.
  10. Garnish with fresh berries and mint leaves immediately before serving, if desired.

Notes
