Turkish Pasta with Yoghurt and Garlic

Ingredients
  

Pasta
  • 12 oz pasta shells, fusilli, or penne
  • 1 tbsp salt for pasta water
Garlic Yogurt Sauce
  • 2 cups Greek yogurt
  • 4 cloves garlic minced
  • 1 tbsp lemon juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Beef Topping
  • 1 lb ground beef
  • 1 small onion finely diced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Paprika Butter
  • 3 tbsp unsalted butter
  • 1 tsp sweet paprika
  • 0.5 tsp smoked paprika
Garnish
  • 2 tbsp fresh parsley chopped

Equipment

  • Large pot
  • Large skillet
  • Mixing bowl
  • Small saucepan
  • Wooden spoon

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve some pasta water and drain.
  2. Mix Greek yogurt, garlic, lemon juice, salt, and pepper in a bowl.
  3. Heat olive oil in a skillet. Cook onion until soft.
  4. Add ground beef and cook until browned.
  5. Season beef with paprika, cumin, oregano, salt, and pepper.
  6. Melt butter in a saucepan and stir in sweet and smoked paprika.
  7. Place pasta in serving bowls and top with garlic yogurt sauce.
  8. Add seasoned beef and drizzle with paprika butter.
  9. Garnish with parsley and serve immediately.

Notes

For best results, bring yogurt to room temperature before mixing with warm pasta. Add chili flakes for extra heat.
