- Remove the papery husks from the tomatillos, rinse away any sticky residue, and quarter the tomatillos. Prep the onion, poblano, jalapeño, garlic, and potatoes.
- Add the tomatillos, onion, poblano, jalapeño, garlic, potatoes, white beans, corn, and vegetable broth to a 6-quart slow cooker.
- Sprinkle in cumin, oregano, coriander, smoked paprika, salt, and black pepper. Stir gently to distribute the seasonings.
- Cover and cook on LOW for 6 hours, or until the potatoes are tender and the tomatillos have softened into the broth.
- For a slightly thicker stew, mash a small portion of the potatoes and beans directly in the slow cooker, then stir them back into the broth.
- Stir in the fresh lime juice and chopped cilantro. Taste and adjust salt, pepper, or lime as needed.
- Ladle into bowls and serve hot with avocado, extra cilantro, lime wedges, tortilla strips, or warm corn tortillas if desired.

Notes
For a hotter stew, leave some jalapeño seeds in or add a second jalapeño. For a thicker consistency, mash 1 to 2 cups of the cooked stew before serving. Frozen corn can be added directly without thawing. Leftovers keep well in the refrigerator for up to 4 days.
