- Bring a medium saucepan of water to a gentle boil. Prepare a bowl of ice water and set it aside.
- Carefully lower the eggs into the boiling water using a slotted spoon.
- Cook the eggs for 6–7 minutes for soft, jammy yolks or 9–10 minutes for firm yolks.
- Transfer the cooked eggs immediately to the ice bath and let them cool for 3–5 minutes.
- While the eggs cool, toast the bread until golden and crisp.
- Spread each warm slice of toast generously with softened butter.
- Spread about 1/2 teaspoon of Vegemite in a very thin layer over each buttered slice.
- Peel the eggs, slice them, and arrange one egg over each piece of Vegemite toast.
- Season lightly with flaky sea salt and cracked black pepper. Garnish with chopped chives and optional avocado, then serve immediately.
